Morning Glory Muffins

We don’t know what your goals for 2022 are but if your anything like us at TPCI your goals probably revolve around having a happier and healthier new year. One of the ways we like to show love and connect with people is through food. And being an Inn, we tend to love a good breakfast get together with family and friends. One of our go to health smart recipes is our Morning Glory Muffin. Now we can’t take credit for this lovely muffin but we have made it our own.
Gather up your ingredients and a few friends and make this breakfast super star.

2 c flour
1 1/4 c sugar
1 1/2 c coarsely shopped pecans
1 c grated carrots
1 c grated zucchini
1 apple, peeled, cored and chopped
3/4 c shredded unsweetened coconut
3/4 c dried cranberries
1 tbsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 large eggs
2/3 c oil
1/3 c applesauce
1 tsp vanilla

Makes 24 small or 18 large muffins.
Preheat oven to 375 degrees.
Grease or paperline 2 12 muffin tins.

In a large bowl combine flour, sugar, nuts, carrots, zucchini, coconut, raisins, cinnamon, baking soda and salt. Mix well and make a well in the centre.

In second bowl, beat together eggs, oil and vanilla. Pour into well and mix to combine. Keep lumpy.

Spoon into muffin pans. Bake for 25 mins or until done. Freezes well.

Inn Keeper Tip!

Prepare the batter ahead, spoon it into lined muffin tins and then freeze. Take frozen muffins out of the tins and put them in a ziplock bag to store for up to three months. When ready to bake, take them out, peel off paper liner, place them in greased muffin tins and bake for 30 mins.
